Sodium bicarbonate (NaHCO3), also known as baking soda, is an acid salt of carbonic acid and sodium hydroxide. Baking soda got its name from the fact that it aids the batter of cakes and cookies to rise when baked. It is a white crystalline powder which is non-toxic, odourless, tastes salty, and completely soluble in water.
It is used in cooking vegetables, to make them softer. It can be used as a wash to remove any acidic impurities from a "crude" liquid, producing a purer sample.
