D - different ascorbic acid sodium is a white crystalline powder or granular with a little saline taste, easily soluble in water, melting point 200°C. In solid state it is stable in air, its water solution is easily mutated when it meets with air, trace metal, heat and light. It is important antioxidant in food industry, which can keep the color, natural flavor of foods and lengthen its storage without any toxic and side effects. When used in processed meat such as hot dogs and beef sticks, it increases the rate at which nitrate reduces to nitric oxide, thus facilitating a faster cure and retaining the pink coloring. As an antioxidant structurally related to vitamin C, it helps improve flavor stability and prevents the formation of carcinogenic nitrosamines.
